A big temperature controlled chai was finished just in time for the 2012 vintage which his enables them to have a single bottling for each wine and then to store in perfect conditions. The average age of the vines is not less than 40 years old. Vinification is traditional, in a mix of a little stainless steel and cement vats. Elevage is then in foudres. Garnacha thrives in these conditions and represents 65% of total production. The Cierzo wind from the Moncayo sweeps across the foothills of the mountain. This cold, dry wind reduces humidity levels and allows grapes to be picked a couple of weeks later in the harvest, at full maturity.\u003c\/p\u003e\n\u003cp\u003eBorsao has access to a large number of vineyard plots at different altitudes, and hence to a wide selection of fantastic quality grapes. Indeed Krohn only work with grapes from A-graded vineyards across all of their ports, and their top wines are still trodden by foot.
