Winemaking by this family in Puligny-Montrachet began in the 16th century, with Jehan Carillon in 1520. Jacques Carillon joined his father in the family vineyard in 1980 and later, in 2010, Jacques and his wife Sylvia founded Domaine Jacques Carillon with 5.25 hectares of vines, pimarily in the village of Puligny-Montrachet. Abstaining from the use of herbicides and pesticides, they tend to everything by hand, and in the cellar, they restrain the use of oak with only 15-20% new barrels, keeping the wines fresh and pure.
