A big temperature controlled chai was finished just in time for the 2012 vintage which his enables them to have a single bottling for each wine and then to store in perfect conditions. The average age of the vines is not less than 40 years old. Vinification is traditional, in a mix of a little stainless steel and cement vats. Elevage is then in foudres. The Wairau plains were formed originally by glacial action and the ranges which now define the valley, where the Wairau River flows, lead to a range of soils. Since its founding, its members fought hard to protect the good name of Arbois, with their work being rewarded in 1936 when Arbois became one of the first of the new appellations to be born.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eToday around 100 members (with an average holding of around three hectares) deliver approximately one-third of the of the AOC’s production to the co-operative. Only twenty members are full time \u003cem\u003evignerons\u003c\/em\u003e, whilst another ten have either cattle or other crops. The balance are members with small-holdings or employed elsewhere full-time, working their vines at the weekend or in the evenings. The rest are retired.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eWith a combination of ancient and modern cellars, the wines have been an extremely reliable source of Jura wines for over ten decades now. In the early 1990s, an existing building was adapted for the storage of Vin Jaune. Its story began with the aristocratic Andrada-Vanderwilde family, who for two centuries provided grapes and wine for the production of sherry in the area. In 1972 Fernando Andrada-Vanderwilde took over some old sherry cellars and brandy soleras from a couple of local bodegas, and changed the name of the company from Fernando III to Fernando de Castilla.\u003c\/p\u003e\n\u003cp\u003eIn 1999 Jan Pettersen, a Norwegian with 15 years experience at Osborne, bought the company and also acquired a neighbouring almacenista, José Bustamente. He also formed a partnership with a local grape grower – to ensure consistent supply of high quality grapes – unusual for the smaller bodegas, who usually have to rely on co-operatives.
