They produce an impressively broad portfolio, combining options of both indigenous grape varieties and international varieties. Trentino has a huge proportion of wines produced with the DOC classification, higher than any other Italian wine region and Cavit accounts for 60% of the wine production in this region, advising and supervising all aspects of the production, from vineyard to bottle.

For more than two decades, Cavit has adhered to the "Protocol for the Production of High-Quality Wines in Trentino", which marks its committment to fully sustainable agriculture, as well as being a member of SEDEX and having achieved the Sistema di Qualita Nazionale Produzione Integrata certification. Cavit uses only green energy and has made major investments aimed at reducing energy consumption. In collaboration with MPA Solutions and leading research centres in Trentino, Cavit has developed the complex system PICA (Integrated Agricultural and Wine-producing Cartographic Platform) to network 4,500 vine growers of the 11 Cavit wine producers' co-operatives and collecting information and giving advice, with the main purpose of helping the grower to achieve total sustainability.
