This gives a high level of sugar and high alcohol, required for the appassimento method. ripe grapes mature on the vine for about 15 days, during which period 50% of their weight and moisture is lost. After a rigorous hand harvest, the grapes are pressed and the fermentation starts; the skins are left in the must for a long period to extract flavours and the characteristic ruby red colour. The wine is then left in oak for around 3-4 months.
