The grapes are handpicked and transported back to the winery in small crates. Depending on the batch, the grapes are partially or totally destemmed. A cold maceration process allows for a gentle extraction of tannins, pigments and primary aromas. The alcohol fermentation is carried out by the indigenous \u003c\/span\u003e\u003cspan\u003eyeasts, unique to each plot and terroir.
