Tasting Note

The drama starts as soon as you pour, this is a remarkably coloured Pinot Grigio. The nose is exotic and enveloping in a sweet and sultry sort of way … very melony, peachy, apricotty. Similar on the palate with a really soft and full ‘pillowy’ sort of sensation. It feels almost ‘thick’ in the mouth and you keep looking into the glass to check you didn’t buy the ‘with bits’ version! It drinks fantastically as soon as you open it but if you can keep your mitts off it for 40 mins -hour, it definitely opens up and offers even more. It has relatively low acidity and that full soft palate really sets it up for a spectacular food pairing … San Danielle ham … (Osvaldo make the best). The deep savoury flavours of the ham and its lovely saltiness work just fantastically with the flavours and textures of the wine.

Producer

Fully ripe Pinot Grigio grapes from 4 different vineyards are selected for this dramatically rich and expressive, deep ramato, style wine. Destemmed grapes, open top tanks, ‘pied de cuve’ directly from the vineyards used as a ‘starter’, gentle, manual pushing down of the cap daily. Fermentation starts in stainless steel and the wine is moved into large oak casks to complete part way through. Partial Malo.
