Agnès Dewe operates her eponymous estate with respect for the land; she is currently in the process of getting her organic certification. Dewe's wine typically exhibits gentle tannins and subtle flavours that concentrate on a purity of fruit. Beyond her classic Mercureys, Dewe also produces a small amount of Aligote, Burgundy's dirty little secret. Except for one appellation that is allowed to grow Sauvignon Blanc, Aligote is the exception to Burgundy's ban on any other grape for white wine.
