Tasting Note: A rich, intense, full-bodied red wine with black plum, black cherry, cocoa and vanilla spice notes. Easy drinking and pairs well with red meats, especially roasted meat dishes, and mature cheeses.

Production: The Rosso IGT Puglia Vino Appassimento Gold Release from Ca'Vittoria is a 60% Negroamaro, 25% Merlot, 15% Primitivo blend of grapes grown and harvested in the Salento area of Puglia, with picking occurring as late as October. This gives a high level of sugar and high alcohol, required for the appassimento method. ripe grapes mature on the vine for about 15 days, during which period 50% of their weight and moisture is lost. After a rigorous hand harvest, the grapes are pressed and the fermentation starts; the skins are left in the must for a long period to extract flavours and the characteristic ruby red colour. The wine is then left in oak for around 3-4 months. The resulting wine is concentrated and moreish, with characteristic notes of plums and raisins.
