From the oldest whiskey distillery in New York City, the passage of time has..... oh who am I kidding. Sure it may be the oldest whiskey distillery in NYC, but it was founded in 2010! You have to remember that the USA went through a period of prohibition where booze was bad and distilleries were shut down, so this young distillery is the first opened since those dark days in the early 20th century.
Colin Spoelman and David Haskell started the distillery in Williamsburg, and in 2012 they moved to the century old Paymaster Building in Brooklyn Navy Yard. They use a Scottish copper still and New York Grain, ageing their whiskey for at least 12 months. I know that to Scotch drinkers that is practically new make spirit, but in those brief 52 weeks a wonderful spirit emerges.
